An Autumn Surprise (recipe for "miracle jam")

About two weeks ago, while taking a walk in the woody mountainous area above my house, I noticed a bush that I had somehow overlooked before. It was a big, leafy, messy bush FULL of pea-sized red berries. For some reason, this sight caused me to get really excited, and though I had no idea what the bush was or if the berries were edible, they seemed to be screaming, “Make jam with us!” :) So… I researched and asked some people if they knew what it could be, but no one seemed to know. I finally found a wild foraging forum where the bush was identified right away as an Autumn Olive bush- a native of Japan and China, planted here to prevent erosion. I was so excited! I had tasted of the berries prior to knowing exactly what they were. My uncle assured me they were not poisonous. They had a apple/grape/cherry/cranberry flavor and I knew they would surely make wonderful jam. So, on Thursday afternoon, I began picking as many as I could in the time that I had. I ended up with a total of about 10 cups.

I searched for jam recipes and finally came up with a modified one taken from several. I made the jam yesterday. I have named it “Miracle Jam”. ;) Why? Because I worked fairly long and hard to get it safely sealed in jars, only to find it about the consistency of molasses when I retired for bed last night. I couldn’t help but be disappointed. I asked God to do a miracle and let it somehow be “real jam” this morning. I explained to Him that I could still use it as some sort of sauce, but it would be really wonderful if He would cause it to set for no other reason than He is rich in mercy. (Funny how we “explain” things to God as if He doesn’t already know, huh? Oh, but how He loves to hear our hearts poured out vulnerably to Him.)  Guess what?! When I woke up and went into the kitchen this morning, it had set into thick JAM!! How good He is! Dayenu! It would have been enough if He had done nothing more than cause the bushes to bear berries for us to enjoy just as they were, but He allowed me to have beautiful jam out of them! Once again, He gave me something I did not deserve, something so seemingly small, but such a blessing to me and my family.  Even with the rain and dampness, which could have caused the delayed setting, He answered my prayer and gave me beautiful gelled jam this morning! Thank You, Lord!

Below, I will try to post a step-by-step review of how I made the jam for anyone who may have loads of these beautiful Autumn gems near your home!

1. Wash jars in hot soapy water and place in a 250 degree oven for 20-30 minutes to sterilize. Boil lids and rings in a pot on top of stove.

2. Wash berries (I used about 7 cups which yielded 4 cups of strained berry goodness which I used in the jam) and allow to drain in colander.

3. Crush whole berries in Vita-Mix or other high powered blender. You may have to add a touch of water, as the mixture is fairly thick.

4. Pour mixture in a strainer and strain the lovely berry puree from the fiberous pulp and seed residue into a 6-8 qt. pot. ( I have to say that when I saw this beautiful mixture, I was amazed. It doesn’t take much to excite me, but I have never seen such a brilliant color in a natural berry. It was absolutely beautiful! The picture can in no way bring it justice. It was the brightest, most delightful rosy red I’ve ever looked upon!)

5. Measure 7 cups of evaporated cane juice (regular sugar works just as well. Also, I felt this was way too much sugar, but since I had already bought the regular “Sure-Gel” pectin, the sugar could not be reduced. Next time I will look for the pectin designed for jams with no or low sugar).

6. Mix the 4 c. of berry mixture, sugar, and 2 squirts of lemon juice in the large pot you used to strain your berry mixture into. Bring to a rolling boil on high heat, stirring constantly. Once it has reached a rolling boil, remove from heat, quickly add one packet of the fruit pectin, and stir well. Return to heat and allow to continue to boil for exactly one minute, stirring constantly.

7. Remove from heat. Have your sterilized jars, lids, and rings ready. Ladle the hot mixture into the jars, leaving about 1/8 of an inch free at the top. Place lids on and screw rings tightly (For me, it made 9 half-pint jars of jam). Turn the jars upside down on a towel. They should seal within 20 minutes at most, and you can turn them right side up at that time if you wish.

8. Don’t be disappointed if the jam looks too thin even after the jars have sealed and cooled. ”Commit thy way unto the LORD; trust also in him; and he shall bring it to pass.” (Psalm 37:5) :)

This jam has a very unique taste, like all kinds of berries wrapped into one! Raspberry, strawberry, cranberry, and more. It’s lovely on toast, biscuits, scones, even spread on whole grain pancakes, or used as a sauce for a fancy chicken, roast beef, or lamb dish. It could also be used as filling for a cake. Enjoy!

Morning Glories

This morning, as I walked back from my Grandma’s house,  I happened to look up toward the garden, now quite desolate and full of dead and dying plants that need clearing out. Just 3 months ago, everything was fresh and green and young. Now, the season for rest has come. How blessed we have been to reap a beautiful harvest once again this year! Praise the Lord! Gazing at the sad looking garden for a few moments, I noticed a familiar and comforting sight. Morning glories! Wild morning glories always seem to find their way into my garden near the end of summer when I stop weeding as much, and cover everything with their creeping vines. This reminded me of an entry I had written a couple of years ago, and how God spoke to me through this bittersweet picture. I hope you are blessed by it!

This morning, I decided to take a stroll up to my little garden. It has been at least a week since I’ve done so. Things have been so busy for me and the harvest has finished coming in for the season. I am so glad I did decide to go. God gave me a very special treat. As I studied the remnant of what was, He gave me a renewed hope. The only things remaining of my crop now are a few golden tommy-toes, a deformed, ball-shaped cucumber lying among deadened vines, and a few brilliant golden squash blooms, still showing off on what I thought was an almost-dead plant. Everything else is covered in “weeds”. After the last harvest, I realized there would be no more need to weed it as everything was naturally dying down. And boy, have the weeds taken off! I walked around the garden this morning, appreciating the cool air on my face after such a scorching summer and I thanked God, our Great Provider (Jehovah Jireh) for being so very good to me and my family by providing us with so many delicious meals made from our fresh garden vegetables. We were even able to freeze a small amount. I felt like singing the merry Passover song, “Dayenu” which means “It would have been enough…” It would have been enough, Lord if all You ever did was bring the Israelites out of Egypt and never included the “Gentiles” in Your plan of salvation (But I’m so glad you did!!!). It would have been enough Lord, if You had wrapped Your infinite Self in flesh and died on the cross and rose again (Oh, how much more than enough that would have been!!). We didn’t deserve any of the GREAT and MIGHTY things He has done and yet…He just keeps on giving. What an AWESOME God we serve!! I felt like singing, “It would have been enough if You had given us one yellow squash or one banana pepper or one tomato or one green bean… because that would have been more than we deserved….BUT you gave us an entire crop of good things! And extra to put away for winter! What mercy and grace our Father lavishes upon us! Its truly beyond our understanding.
In the middle of my “song”, I noticed something that I’ve seen for a few weeks now and just not stopped to savor. My “weeds” didn’t actually look so bad, because growing on an endless vine throughout and on top of the entire former garden were hundreds, maybe thousands of absolutely beautiful, majestic MORNING GLORIES! I couldn’t help but touch them, smell them, even pick a few. God put on such an awesome art show this year! On one end, He placed soft periwinkle ones. In the middle, He placed bold, royal purple ones. And on the other end, He placed snowy white ones with violet stripes inside. Suddenly, I felt like breaking into song again, “It would have been enough if You had only given me one color… but You gave me three!!”. I restrained myself. I finally walked away with a handful of these beautiful “glories” He had painted so carefully and placed in my garden.
But after I had left the garden, He continued to speak to my heart. I was reminded of the poison ivy I had gotten a few weeks ago while picking beans. It was hiding in the vines and started on my finger and spread all over my hands and got on my ankles as well. Ugh! It was so aggravating. I was also reminded of a particular weed that grows tall and has green spikes on it and it literally sticks to your clothes and skin and wow does it itch! I remembered the countless times I would come in from the garden with an itchy red rash all the way up both arms where I had been picking squash and zucchini. Through each little aggravation, I remember thinking how wonderful it must have been in the Garden of Eden. They didn’t even have to plow the ground to grow their food! Much less suffer from itchy rashes from weeds and vines. It was sobering to reflect on the result SIN has had on mankind, small and large. Just a couple of days ago I was reading in Revelation and I was taken aback at the Sovereignty of God Almighty. It says there will be a time when every mountain and island is moved from its place and men will be begging for large rocks to fall upon and crush them… so they will escape the great wrath of the Lamb. Wow. He is such a merciful God, but there is no doubt that He detests sin and will not tolerate it. Sin has brought everything from death, sickness, famine, war, and so much more into a world that God designed for Himself and His people. And on a less severe scale, we see results of sin a lot in the summer time, especially when we’re out there weeding that stubborn garden. Getting allergic reactions, pricked by thorns, and eaten up by poison ivy and mosquitos…and yet God showed me this morning, that His “glory” and His gentle mercies are still so very present in the midst of “weeds and thorns”. (Its a bit easier to walk through chigger laden weeds when you can enjoy an array of God- created colors everywhere! So soft and fragile, but so faithful to appear each day.) It is so profound. You cannot miss it unless your eyes are closed! It is so brightly colored and multi-faceted. It is breathtaking! And the sweetest part is, its not only AMONG the thorns and weeds, it is literally ON TOP of them-covering them! Just like His grace covering our sins when we come to Him with a humble repentant heart. Is that how He sees us, even on days we fall so short? Are the beautiful, pure blooms of His grace and mercy so brilliant, that the rubble underneath seems to disappear? What an immense blessing it is to walk covered in the “morning glories” of God’s grace! I am so thankful for the word God spoke to my heart today. The result of a fallen, sinful world is devastating, and yet, God’s mercy is still so very evident! It is truly NEW EVERY MORNING! Thank you, God that You stopped me this morning to take in Your glory and Your mercy!  

 

 

Wasting your life on Jesus . . .

I actually borrowed the title of today’s entry from the last chapter of a book I just finished called, “Passion for Jesus”. It was a wonderful read, and I passed it on to a friend as soon as I finished. Back to the title line; “Wasting your Life on Jesus . . .”  – such a beautiful phrase that makes our flesh uncomfortable- so deep, and meaty. It’s something I’ve been accused of before using a different choice of words :) . It is a humble honor. Has anyone ever told you that you are “wasting your life” or that your life is being lived “in vain” because you are not doing what the world or much of the church expects? Because you have vowed to your Heavenly Father to NOT compromise His perfect plan that He has revealed to your heart? Because you believe Him when He said that obedience is better than sacrifice, and you are committed to obeying Him? Have you stood waiting, watching, seemingly alone, seeing no sign of hope (remember that real hope is not seen-Romans 8:24)?

If this is you today, allow me to re-introduce you to a woman who loved Jesus and wasted herself on Him.  Her name is Mary.  Mary of Bethany. Days before Jesus was to be crucified for her sins, my sins and yours, he was anointed with perfume that was of great worth. This beautiful act of servant love was done by Mary. She served Jesus in a different way than her sister, Martha. She wasn’t busy getting the dinner prepared or making sure everything was just right for company. She just wanted to sit at Jesus’ feet and bless Him as He had surely blessed her. Many see this as selfish. I see it as the kind of heart God works in and the life He works through. If we do not spend time at His feet, communing with Him, blessing Him with our worship, pouring our most prized possessions upon His heart, how can we ever become more like Him? Martha definitely had an important job, and we should never overlook her act of service, but we also must remember that “heart service” is more valuable to God than “law service”. I believe that looking at the two sisters, we can find an example of a good balance in our spiritual lives. 

Mary prepared her Lord for burial and she most likely did not even know it, until He said the words. She took what would have probably been her only asset- her only hope for future security and poured it out on Jesus! Wow! What if every professing Christian did that today? Can you imagine how beautiful the Bride of Christ would shine? I believe this is God’s dream for the church. Oh, how I long to fulfill the dreams of His heart! No one commended Mary for what she did except Jesus Himself. In fact, they criticized her and named some things she could have done with this expensive perfume that seemed more logical. But, notice that Jesus jumped to her defense, and He promised that wherever the Gospel is taught, she will be remembered. 

Are people who observing your lifestyle, perhaps even loved ones, looking at you, shaking their heads in disgust? Are they naming a list of very practical, very sensible things you ”should” be doing rather than allowing God control of your life and your love story? Do these things sometimes cause doubt to rise within you that you are being too radical for Christ? Take heart, precious sister. Do not grow weary in doing good. Pray for the faith of Abraham that was accounted unto him as righteousness. . . and remember Mary. Remember how she “wasted” something very special on Jesus. Remember how she was criticized, but also remember how Jesus came to defend her. He is our strong tower and defender! I can’t imagine anything more beautiful to Him than seeing His children pour out their dreams at His feet, along with the expectation that He will give them back after we lay them down. Is there anyone else out there that yearns along with me to pour out everything before the Lord for no other reason than HE IS WORTHY and HE IS KING and HE IS THE LOVER OF OUR SOUL? It won’t be easy and we won’t even be able to accomplish it in our own strength, but if we ask Him, He’ll renew our heart yet again. Sometimes, we have to “pour out” on a regular basis, because our flesh tends to try and take back what our spirit longs to give completely to Jesus. Be encouraged today that your Heavenly Bridegroom delights in you! He rejoices over you with singing! And He longs for you to waste yourself at His precious feet, where He will defend, protect, and commune with you.

*Below is an excerpt from Leah Cross’s blog, beautifully written by her (except the last verses in bold). I thought it would fit well here, as we’ve talked about pouring out all of ourselves on a regular basis to gain more of Him.

I held something so precious in my hands. Many times I would offer it up on the altar for God . . only to snatch it back soon afterwards. Smiling down at me as His child, he gazed into my eyes and looked into the depths of my heart. “My daughter, please give this to me entirely. I want to give you that which is far above what you would expect. It may not happen how you want it to happen and it may not be that which you thought it would be, but I promise my child to give you nothing but my best for your life, so that you may in return glorify me more fully. I am God alone. I can and will do that which is exceedingly, abundantly above all you could ever ask or think. This may cost you pain, but you are you willing to even endure extreme pain for my sake and for my glory?” With tear stained eyes, I finally released and surrendered what I previously thought was so wonderful … and I got ALL of HIM instead.”
